4 Ways to Store Herbs for Winter Cooking

Herbs don’t last forever—but if you store them the right way, you can preserve a whole season’s worth of flavor. Whether you're working with basil from your garden, rosemary from the woods, or store-bought parsley that needs saving—here’s how I do it depending on the herb and use case:

🌿 1. Air Drying (for Hardy Herbs)

For herbs like oregano, thyme, sage, and rosemary, air drying is my go-to.
• I bunch them up with twine and hang them upside down in a dry, shaded area with airflow (like the shed or under the porch).
• Once fully dry and crispy, I strip the leaves and store them in mason jars away from light and heat.

➡ Great for: cooking, teas, herbal rubs, DIY spice blends

❄️ 2. Freezing (for Tender Herbs)

Soft herbs like basil, parsley, dill, and cilantro don’t dry as well—they lose flavor or turn bitter. Instead, I:
• Chop them and freeze them flat in a bag, or
• Mix with a little olive oil and freeze in ice cube trays

➡ Great for: soups, sauces, tossing into stews and roasts straight from the freezer

💨 3. Freeze-Drying (When You Want Shelf-Stable & Potent)

• Once dried, they’re shelf stable for years in Mylar or jars with oxygen absorbers

• You can preserve herbs in oil, vinegar, or even salt.
• Herb-infused vinegars are great for dressings.
• Salts can make an amazing rub or finishing seasoning.
