Here is a list of things roasters need to know that you won't learn in a typical roasting class. This is a recording of the Main Stage presentation I gave at Madrid Coffee Fest, February 2026. I gave the presentation in Spanish, and have included English subtitles (apologies for any inaccuracies).

01:57 Who I am
05:23 #1. Coffee is an agricultural product
10:15 #2. Learn the basics of green coffee
12:26 #3. The easiest way to roaster better is to buy better
16:19 #4. The majority of a roaster's work is repetitive
18:38 #5. Clean your roaster. Frequently.
20:39 #6. Roasting is a physically demanding job
25:17 #7. Develop your palate
28:43 #8. This is no one "right" way to roast
31:05 #9. Great coffee isn't enough to achieve success
34:14 #10. Coffee knowledge is always changing and developing

Try things.
Taste things.
Question everything!

Happy roasting! Cheers :)
