Chickpea Pizza Nuggets ( makes about 25 nuggets,about 3 portions)
- 400g (14 ounces) cooked Chickpeas - 45g (1/4 cup) Bread crumbs - 2 eggs - 30g (1/4 cup) Parmigiano - 1 clove of garlic grated - Salt and pepper to taste - 1 tbsp of extra virgin olive oil - Origano, basil, any herbs/ spices you like. Be generous with the herbs/spices. - Dry Mozzarella, cut into small cubes.
Process until smooth. If your mixture seems dry, you can add 2 tbsp of milk or water.
For the bread coating:
- Bread crumbs - Salt/pepper to taste - Garlic powder - Onion powder -2 eggs and 1/4 cup of milk

Creamy Cheesy Gnocchi (makes 3 portions)
500g (18 ounces) Gnocchi 45g (3 tbsp) Butter 250g (9 ounces) mild Gorgonzola Parmigiano Salt and pepper to taste
- 250g (1¾ cup) All purpose flour - 80g (½ cup) Powdered sugar - 1 Egg white - 150g (1⅓ sticks) Cold butter cut into small pieces - ¼ tsp Salt - 1 tsp Vanilla - Strawberry jam
Combine the flour, sugar, salt and butter. Using your fingers, rub the butter into the flour. Look for pea-sized clumps.
Add the egg white and vanilla extract and mix until a dough forms. This will take some time! The mixture might seem too dry at first but be patient and continue to work the dough with your hands. Look for a smooth uniform dough.
Roll out the dough and cut out heart shaped cookies. Add jam and top with a lattice crust.

Carrot Cake Mug Cake
- 20 g (1½ tbsp) Butter - 15 g (1 tbsp) Sugar - 45 g (3 tbsp) warm Milk - 1-2 tbsp tbsp grated carrots - 35 g (4 tbsp) All purpose flour - ½ tsp Baking powder - 1/2 tsp Cinnamon - Pinch of Salt
Top with whipped cream or cool whip!
Lemon Blueberry Mug Cake
- 20 g (1½ tbsp) Butter - 15 g (1 tbsp) Sugar - 45 g (3 tbsp) warm Milk - 4-5 gratings of lemon zest( zest it directly in the mug) - 35 g (4 tbsp) All purpose flour - ½ tsp Baking powder - 2 tbsp of Blueberries - Pinch of Salt
Lemon Drizzle: 2 tbsp powdered sugar + 1 tsp lemon juice. Add more powdered sugar or more lemon juice for a thicker or more runny consistency.
Please note: As shown in the video, these donuts will NOT have even browning. Do not be tempted to cook these longer than 5 minutes or they won't be fluffy! Cook donuts for 4-5 minutes.
Cinnamon Sugar:
4 tbsp granulated Sugar 2 tsp Cinnamon Pinch of Salt
SUBSTITUTES:
**Sweetened Yogurt can be substituted for unsweetened yogurt and 1 tbsp of sugar. **Self rising flour can be substituted with 140 grams of plain flour + 1 1/2 tsp baking powder ( 1 cup + 1 1/2 tsp baking powder)
Edible Chocolate Chip Cookie Dough in the microwave:
50 g (6 tbsp) All purpose flour 30 g (1½ tbsp) unsalted butter 1 tbsp Brown sugar 2 tbsp White sugar ⅛ tsp Salt 30 g (2 tbsp) Milk 2 tbsp Chocolate chips
The cookie dough may seem soft, that's due to the melted butter and milk. For a firmer texture you can refrigerate the dough. It's up to you whether you like a softer texture or a firmer texture.
Edible Sugar Cookie Dough in the microwave:

60g Butter ( 1/2 STICK) 1 room temp Egg 150 g Buttermilk or Milk ( 1/2 cup + 2 tbsp) 1/2 tsp Baking Soda 1/4 tsp Baking Powder 100 g White Sugar ( 1/2 cup ) 180 g All Purpose Flour ( 1 cup + 1/3 cup) 1/4 tsp Salt 1 tsp Vanilla
Bake anywhere between 5-10 minutes. More tips on my website.
DON'T OVER BAKE. Once cool store in an airtight container.
- 130g Old fashioned Oats ( 1 Cup + 2 tbsp) - 100g Honey (3.5 ounces) - 25g ( roughly 1 ounce ) Softened or melted Peanut Butter( or any other nut butter you prefer) - Pinch Of salt
Each Snack bar is roughly 110 calories.
Optional: 3 tbsp chocolate chips
With the chocolate chips each snack bar will be roughly 135 calories.

- 100g Very Cold Yogurt 0% fat (3.5 ounces) - 1 tbsp Truvia or 0 cal Sweetner of your choice. - 1 tsp Vanilla Extract ( Don't skip it!!) - 1 or 2 oreos. ( I prefer to take the filling out as it doesn't add anything to the recipe, but it's up to you )
- 60g INSTANT oats or 2 Sachets of Instant Oatmeal - 50g Greek Yogurt (3 tbsp) - 1 small/medium Egg - 1 tsp Vanilla Extract - 1 tsp Baking Powder - 60g Milk (4 tbsp) - A few drops of 0 cal Sweetner of your choice! OR 1 tbsp of regular sugar if prefered. - Pinch of Salt
Serve with a drizzle of Maple Syrup! If your batter seems too loose, set it aside for about three minutes, and the oats will absorb some of the liquid. Don't forget about your batter though LOL!
Calories for all 4 pancakes ( using a 0 calorie sweetner) is 320 calories.
With a drizzle of maple syrup (around 2 tbsp) 420 calories.
