I like to stock my pantry with a wide variety of meats and vegetables. Chuck roasts is one of my absolute favorites, and when I can buy up some of these on sale, I often will. They might go in my freezer for a while (aside from the one I might cook for supper right away), but I always like to can some up because we love having these as quick and easy meals any day of the week. It's especially good with mashed potatoes.
The canning time on this is the same as anything with beef, chicken, or pork: 75 minutes for pints and 90 minutes for quarts.

Doughnut Ingredients:
• 1 stick butter
• 1 1/4 cup milk
• 2 eggs
• 2 2/4 tsp. active dry yeast
• 1/4 cup sugar
• 1 tsp salt
• 4 1/4 cups all purpose flour (approximately)
• Neutral oil for frying
Glaze Ingredients:
• 2 cups confectioner's sugar
• 1/4 cup milk (you can add up to 1 Tbsp more if the glaze isnt runny enough)
• 1 tsp vanilla (optional)
The secret ingredient is what does it!
INGREDIENTS:
1 cup warm water (105-115 degrees F)
1 teaspoon sugar
1 package active dry yeast
1 teaspoon salt
2 tablespoons olive oil
3 cups all-purpose flour
¾ cup powdered milk
1 cup pizza sauce
1 cup shredded mozzarella cheese
Toppings of your choice
INSTRUCTIONS:
1. In a large bowl, combine the warm water, sugar, and yeast. Let stand until the yeast is foamy.
2. Add, olive oil, flour, salt, and the powdered milk. Stir or mix until a dough forms.
3. Use a stand mixer or turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic.
4. Line the bottom of a half-sheet pan with parchment or sprinkle a light coating of corn meal. I prefer parchment!
5. Place the dough in the pan and then press and roll it out until it spreads to all 4 corners of the pan. You'll probably want to let the dough rest for a few minutes first so it's easier to work with.
6. Spread sauce, add cheese and desired toppings.
7. Bake in a preheated oven at 400 degrees F for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. (The recipe I had said 20 minutes, but I find that's way too long in my oven.)
Serve and enjoy!

Ingredients:
* 1 3/4 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 tablespoon cinnamon
* 1/2 teaspoon nutmeg
* 1/2 teaspoon cloves
* 1/4 teaspoon allspice
* 1 1/2 cups sugar
* 1/2 cup canola oil
* 1/3 cup water
* 1 cup canned pumpkin
* 2 eggs
* 1 teaspoon vanilla extract
* 1/2 cup pepitas (sunflower seeds)
Instructions:
* Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan, or line it with parchment paper.
* In a medium bowl, whisk together the flour, baking soda, salt, and spices.
* In a large bowl, combine the sugar, oil, water, pumpkin, eggs, and vanilla extract. Stir until well blended.
* Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
* Pour the batter into the prepared loaf pan. Sprinkle the top with the pepitas, pressing them slightly into the batter.
* Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
* Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

So simple! Just pat the pork loin dry and coat in about a tablespoon of olive oil and prick all over with a small, sharp knife. You don't want big deep gashes. You just want little holes where the seasonings can penetrate the loin and it will help it cook faster. If you prefer, you can use a fork. Coat the loin generously with steak seasoning and then sear on all sides in a hot skillet before transferring to a 400º oven and cooking for about 15 to 20 minutes on one side before turning over to the other side. The pork loin is done when a meat thermometer registers 145º in the center of the loin.

⚠️ Also, I noticed while typing up this recipe that I read the baking time wrong! I baked this too long anyway. Even 40 minutes would've been enough by this recipe. I thought it had said 45-55 minutes. 🤦🏻♀️ Still, in the future, I'll start checking this at around the 30 minute mark for doneness.
INGREDIENTS
1/2 cup brown sugar
1/2 cup butter
1/2 cup molasses
1/2 cup milk
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon soda
1 teaspoon mixed spices
1 egg
INSTRUCTIONS
Cream butter, and gradually cream in the sugar; add molasses and beaten egg and mix; sift and measure flour, add baking powder, salt, soda and spices, and re-sift together; add flour and milk alternately and mix well; bake in well greased shallow pan in a moderate oven-baking time about 40 to 45 minutes. Serve while yet warm. Ice if desired.
I wanted to keep the ingredients super simple so here's what I came up with:
2 - 3 ripe bananas
1/2 cup butter
2 cups self-rising flour
1/2 cup milk
~1 cup brown sugar (or white sugar, or white sugar + a spoonful of molasses), use more or less to taste
1 tsp vanilla
Dash of nutmeg (optional)
Dash of cinnamon (optional)
Mix ingredients then spoon batter into greased muffin tin for muffins or into a loaf pan if you want to make it into a sweet bread.

Here's how you can make self-rising flour from all purpose flour: For every cup of all purpose flour, add 1 1/2 teaspoons baking powder and 1/4 teaspoon table salt.
This was supposed to get posted before Christmas, but this is good any time of year. It might be a very good idea for Valentine's Day! You'll need a candy thermometer for this one, but it's so worth it!
INGREDIENTS
1 cup butter
1 cup sugar
1/2 tsp. salt
1 cup chocolate chips
Crushed pecans (optional)
INSTRUCTIONS
1. Line a rimmed baking sheet with parchment or wax paper and grease it with butter. Set aside until toffee is ready to pour.
2. Melt butter, sugar, and salt in saucepan stirring constantly until butter is melted.
3. Bring mixture to a boil then stop stirring (except maybe a few times) and keep it boiling until candy thermometer reaches ~285-290º.
4. As soon as toffee mixture reaches the right temperature, pour in greased baking sheet.
5. Sprinkle chocolate chips all over hot toffee and let it sit for a few moments until it softens. Once it softens, spread melty chocolate chips around toffee until surface is covered.
6. If desired, add crushed nuts on some or all of the chocolate layer. (I like to do half with and half without.)
7. Place pan in fridge for about an hour until it sets and then it take out and either break into pieces or use a sturdy knife to score toffee and cut into squares.

THESE ARE IT, Y'ALL! These are so good! Way better than that other sausage ball recipe, and that other one was also delicious! These add paprika (and I added in some cayenne, even though it wasn't in the recipe.)
If you want, you can add more cheese, more sausage, or less bisquick, but I think adding in the teaspoon of paprika and not using that full pound of cheese really makes for a better sausage ball.
INGREDIENTS
1 lb sausage, mild or hot
10 oz grated cheese (in this video, I'm using an 8 oz block that I grated, so not quite 10 oz.)
3 cups Bisquick (I'm using Great Value brand since Walmart was out of Bisquick)
1 tsp. paprika
I also added a few shakes of cayenne.
If you need to add in some water to bring everything together, you can do that, but probably no more than about 1/4 cup.
Once it's all mixed together, form into little balls and bake in 350º oven for about 10-12 minutes. Enjoy!

The ingredients for the biscuits are so simple:
2 cups self-rising flour (I prefer Daily Bread brand)
5 Tbsp. butter, grated into flour
3/4 cup milk
Mix ingredients well and roll out dough. Cut out small biscuits with biscuit cutters (I'm using 2" biscuit cutters in this video.)
Bake in 475º oven for about 10 minutes or until tops are brown. Start looking at them at around the 8 or 9 minute mark.

OLD FASHIONED OATMEAL COOKIES 👵🏻
INGREDIENTS
1 cup butter
3/4 cup white sugar
3/4 cup brown sugar
1 egg
1 tsp. vanilla
1/4 cup water
1 1/2 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
3 cups oatmeal
INSTRUCTIONS
For best results, wrap cookie dough in rolls in sheets of wax paper and refrigerate for a few hours before baking.
Bake ~12 to 13 minutes (or longer, if necessary) in a 350º oven. If you have refrigerated them first, they should start to brown around that time. At that point you can decide how done you want them before you pull them out of the oven. Get a nice glass of milk, a plate of warm cookies, and enjoy!

INGREDIENTS
2 cups semisweet chocolate chips
1 stick of butter (1/2 cup) butter
1 package colorful miniature marshmallows
INSTRUCTIONS
1. In a large pot, melt chocolate chips and butter over low heat; stir until smooth.
2. Take melted mixture off the heat, give it a stir.
3. Add in marshmallows and mix them in.
4. Put mixture into roll shapes on wax paper and refrigerate for a few hours.
5. Slice and enjoy!

GINGER MOLASSES COOKIES 🎄
INGREDIENTS
1 stick (1/2 cup) of softened butter
1/2 cup light brown sugar
1 egg
3/4 cup molasses
3 cups flour
1/4 tsp. salt
1/2 tsp. baking soda
1 tsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
Decorative or large granule sugar for decorating (or you can use this cookie dough recipe to make gingerbread men!)
INSTRUCTIONS
1. Preheat oven to 350º.
2. Mix all ingredients.
3. Chill dough until it's firm enough to roll out.
4. Roll out dough to about 1/4" thickness and use your favorite cookie cutters to cut them into shapes. (I just used circle cookie cutters.)
5. Dust tops with decorator sugar or wait until they come out of the oven and then decorate with icing.
6. Enjoy!

1 can whole cranberry sauce
1 small box strawberry or cherry Jell-O (regular or sugar free)
1 cup hot water
1/3 cup finely chopped celery
1/4 cup toasted chopped pecans
Orange zest (optional)
INSTRUCTIONS
1. Boil one cup of water then remove water from heat and add Jell-O packet to mix until it's dissolved.
2. Add in can of whole cranberries, chopped celery and pecans, and if desired, some orange zest.
3. Refrigerate until set - at least a few hours, though I usually refrigerate this over night.
4. Enjoy!

Super easy to make.
Combine these ingredients and bring to a boil and simmer for 10 minutes to make brine:
• 5 cups white vinegar
• 1 cup water
• 4 tsp non-iodized or canning salt
• 2 Tbsp sugar
Fill jars with jalapeño slices (or leave them whole and just cut slits on each side so the brine can get inside) and then add brine up to 1/2" headspace.
Process at the following times depending on your altitude:
0 - 1,000 ft / 10 minutes
1,001 - 6,000 ft / 15 minutes
6,001 ft + / 20 minutes

Summer Soup is a very traditional eastern NC soup. It may be popular elsewhere, but I'm from here so this is what I know. This is an ideal way to enjoy the fruits of your garden harvest and even have them in your pantry through the winter. This soup uses a small amount of ham for seasoning and it is SAFE as it is using the same ratio of ham to vegetables as you will find in the tested safe recipe for Split Pea with Ham soup.
Some say that you can never can ham, but if you follow the principles in the tested recipes, you certainly can can ham — but just know what you're doing. This is not something that brand new or inexperienced canners should do, but modifying recipes with the same content principles is how we wind up with so many canning cookbooks with lots of safe recipes.
In this video I'm canning 9 pints. The ingredients are:
• just under 2 cups of ham
• corn
• okra
• green beans
• fresh (or frozen) lima beans (not dried lima beans)
• tomato
• salt

The main thing to remember is make a batter that you like the taste of and then thin it out to make a crispy cornbread. The thicker the batter, the thicker (and chewier) your cornbread will be. The thinner the batter, the crisper and thinner the cornbread will be.

INGREDIENTS
For the chicken:
• Boneless, skinless chicken breast, diced (I use about 1 lb for this recipe)
• 1/2 cup flour
• 1/4 tsp. salt (+ more to taste when done)
• 2 Tbsp. olive oil (+ more if needed)
For the sauce:
• 1 tsp. minced garlic
• 1 cup chicken broth (I use chicken stock base + water)
• 1/4 cup lemon juice
• 3 Tbsp. butter
• 2 Tbsp. capers, drained
Also you'll need a box of your favorite pasta (I use angel hair) and a jar of your favorite pasta sauce. (I like Bertolli Garlic & Olive Oil.)
You also might need a little bit more olive oil to ensure your chicken is all cooked through, as well as some salt to taste for the chicken.
INSTRUCTIONS
1. Preheat oven to 180º F (or no more than 200º F) to keep chicken warm once it's cooked.
2. Mix 1/2 cup flour and 1/4 cup salt then lightly dust diced chicken.
3. Heat 2 Tbsp. olive oil in skillet and cook chicken until done. Don't crowd the pan. Cook in batches and keep cooked chicken warm in oven.
4. Once chicken is done, use same pan on low or medium low to heat garlic until fragrant. (Note: If pan has a bunch of oil in it when you're done cooking chicken, blot some out with paper towels. If the bottom of the pan has too much flour stuck to the bottom so that the whole bottom of the pan is brown, you might actually need to clean the pan a bit before adding a bit more oil. Too much of anything is going to make a less-than-pleasant sauce.)
5. As soon as garlic is fragrant, add 1 cup chicken broth and continue to stir, breaking up bits of flour at bottom of pan. Continue cooking until it begins to thicken. Once thickened, add lemon juice. Stir and continue heating. Just before you're ready to serve, add butter to melt and and add in capers and heat through.
6. Heat up pasta sauce in a separate bowl.
7. Once pasta is cooked, assemble everything and serve. Pasta with pasta sauce. Chicken beside it with lemon caper sauce.

Some backstory: I've had more than more jar failures than I care to count over the last year or so — and with Ball lids, no less! Here's what I use:
1 jar pineapple (do not drain liquid)
1 box Jello pistachio pudding mix
1 container Cool Whip
Marachino cherries
crushed pecans
Combine all ingredients and refrigerate for at least an hour. To make more decorate before serving, drain some cherries on a paper towel and add to the top and sprinkle on a little bit more crushed pecans.
This is a great recipe for church fellowship meals, family reunions, or anytime.

In this case, 4 cups of crushed strawberries (about 2 lbs fresh) to 4 cups of sugar. Yield: 5 half-pints
Process in a water bath canner for the appropriate time based on your elevation:
0-1000 ft / 5 minutes
1001-6000 ft / 10 minutes
Above 6000 ft / 15 minutes
USDA recipe:
Strawberry Jam without added pectin
4 cups crushed strawberries (takes about 2 quart boxes strawberries)
4 cups sugar
• To prepare fruit. Sort and wash the strawberries; remove any stems and caps. Crush the berries.
• To make jam. Measure crushed strawberries into a kettle. Add sugar and stir well. Boil rapidly, stirring constantly, to 9° F. above the boiling point of water, or until the mixture thickens.
Remove from heat; skim and stir alternately for 5 minutes. Ladle jam into hot containers and seal immediately.

INGREDIENTS
2 cups self-rising flour (I love Daily Bread self-rising flour)
5 Tbsp. cold butter
2/3 to 3/4 cup milk
Enough cheese to go in all the biscuits
INSTRUCTIONS
1. Preheat oven to 475º and make sure it is up to that temperature for at least 20 minutes before you are ready to bake.
2. Mix together all ingredients, beginning with flour and butter, then add in the milk.
3. Work dough until it is all together in a nice ball. You aren't kneading it like you would yeast bread, but you do need to press the dough together so it's all sticking and holding together well.
4. Pinch off a ball of dough, flatten it on your hand, and press some cheese in the center. Pull the edges of the dough up around the cheese and pinch together before putting the seams face down on your baking pan.
5. Once you have all biscuits on pan ready to go, bake them for about 10 minutes or until tops begin to brown.
6. As soon as you take biscuits out of the oven, brush tops with butter.
7. Wait about 5 minutes or so before serving.

The flavor of the broth from the side meat is good, but I did have to add salt, whereas when I use ham hocks or streak of lean, I typically don't need to add salt.
While I didn't intentionally add the meat that I used in this video to the jars, you would use the same process if you were using a better meat (like ham hocks or streak of lean) — assuming you are using quart jars! The processing time is the same for collard greens AND meats so 90 minutes per jar. If you wanted to add meat to pint jars, you'd need to process them for 75 minutes instead of the 70 minutes that you would typically process collard greens.

The recipe makes about 6 pint jars or 3 quarts.
INGREDIENTS (and what I do differently)
3 lb. boneless pork shoulder (Boston butt), trimmed and cut into 1 1/2 inch cubes
4 tsp. salt, divided (I don’t divide my salt, I only add salt to broth)
1/2 tsp ground black pepper
1 Tbsp canola oil (I don’t use this)
2 qt. chicken bone broth (I just used water + chicken bouillon)
1 8 oz onion, halved then sliced into thin slices
2 Tbsp. dried crushed red pepper (I think I only use 1 Tbsp)
1 1/2 Tbsp. dried oregano
3 garlic cloves (I use about a Tbsp or so of minced garlic instead)
INSTRUCTIONS
1. Preheat oven to 425º.
2. Roast pork cubes for about 30 minutes or until it’s beginning to brown.
3. While pork is roasting, make broth with all the other ingredients.
4. Bring broth to a boil, then turn down to simmer for 5 minutes.
5. When pork is ready, time to get everything in jars. Add pork first, then broth. (I get onions from broth first to ensure even distribution, then ladle the broth on top.)
6. Debubble jars.
7. Clean rims of jars with vinegar, add lids and rings.
8. Process pints for 75 minutes and quarts for 90 minutes at the appropriate pressure for your altitude. (See this chart https://nchfp.uga.edu/how/can_05/strips_cubes_chunks.html)
9. Once jars are done processing and pressure in canner has naturally dropped to zero, leave jars in canner for 10 minutes before removing them from canner and cooling them.
Be sure once your jars are down to roon temperature that you remove the rings and wash the jars before storing them in your pantry.
Here is the full recipe, exactly as it appeared on boxes of Mueller's lasagna decades ago:
INGREDIENTS
8 oz. (1/2) package Mueller's® Lasagne, uncooked
15 oz. Ricotta cheese or 2 cups cottage cheese
2 cups Mozzarella cheese, divided
1/2 cup Parmesan cheese
2 eggs, lightly beaten
6 1/2 cups (52 ounces) of your favorite pasta sauce
1 lb. ground beef or Italian sausage, cooked and drained
1 tsp. parsley flakes
INSTRUCTIONS
1. Preheat oven to 350º
2. In medium bowl, combine Ricotta cheese, 1 cup of Mozzarella cheese, Parmesan cheese, and eggs; mix well.
3. In separate bowl, add browned meat to pasta sauce; mix well
4. Spread 1 cup of meat sauce mixture in 9" x 13" pan
5. Place 1/3 of the uncooked Lasagne noodles over sauce. Spread 1/2 of the cheese mixture over noodles, top with 1/3 of meat sauce mixture.
6. Repeat layering. Top with remaining noodles and meat sauce mixture.
7. Cover with foil. Bake 55 minutes. Uncover, sprinkle with reserved Mozzarella cheese and parsley flakes.
8 Bake an additional 5 minutes, or until cheese is bubbly. Let stand 15 minutes before cutting and serving.

Some people keep this refrigerated (like myself). Others keep it out on the counter. Do what you like, but regardless of how you store it, I can't imagine it will be around longer than a day or two!
Here's how to make this delicious old-fashioned, homemade buttermilk pie.
INGREDIENTS
1 cup sugar
2 eggs
1/2 cup butter, melted
1 cup buttermilk
2 tsp. vanilla
1 Tbsp. flour
1/4 tsp. salt
INSTRUCTIONS
1. Preheat oven to 350º.
2. Mix together all ingredients.
3. Pour into pie shell and bake at 350º for 50 minutes.
4. Turn oven temp down to 325º and bake for an additional 10 minutes.
5. Take pie out of oven and let come down to room temperature and chill before serving. (This pie should not be eaten hot. It's much better when it's cool.)

4. Fill jars and process in pressure canner at your required altitude for 75 minutes for pints or 90 minutes for quarts.

As I mentioned in the video, I use chuck roast for my beef stew. For vegetables, I use carrots, celery, onions, and potatoes. I season it with thyme, salt, pepper, and beef bouillon, then I add water to all ingredients to fill the jars.
