School Cafeteria Pizza - Throwback to the 80s School Pizza Recipe! 😎 QUICK & EASY Old Time Knowledge 2023-12-12 | I love school cafeteria pizza back in the 80s. The lunch ladies started doing something in the 90s that wasn't as great, but THIS recipe tastes spot on for how it was back in the 80s lunchrooms when I was in elementary and middle school. The recipe below is for a half-sheet pan. The secret ingredient is what does it!INGREDIENTS:1 cup warm water (105-115 degrees F)1 teaspoon sugar1 package active dry yeast1 teaspoon salt2 tablespoons olive oil3 cups all-purpose flour¾ cup powdered milk1 cup pizza sauce1 cup shredded mozzarella cheeseToppings of your choiceINSTRUCTIONS:1. In a large bowl, combine the warm water, sugar, and yeast. Let stand until the yeast is foamy.2. Add, olive oil, flour, salt, and the powdered milk. Stir or mix until a dough forms.3. Use a stand mixer or turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic.4. Line the bottom of a half-sheet pan with parchment or sprinkle a light coating of corn meal. I prefer parchment!5. Place the dough in the pan and then press and roll it out until it spreads to all 4 corners of the pan. You'll probably want to let the dough rest for a few minutes first so it's easier to work with.6. Spread sauce, add cheese and desired toppings. 7. Bake in a preheated oven at 400 degrees F for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. How to Make a Tender, Succulent Pork Loin Roast - Ridiculously good and so easy to make! 😍 Old Time Knowledge 2023-04-22 | Here's a great dinner idea! This easy recipe will give you a delicious, succulent, flavorful, tender pork loin every time. I am using about a 2 lb. pork loin and Aldi Steak Seasoning (although any favorite seasoning blend that includes salt will do). I also often make this with my homemade Montreal Steak Seasoning. So simple! Just pat the pork loin dry and coat in about a tablespoon of olive oil and prick all over with a small, sharp knife. You don't want big deep gashes. You just want little holes where the seasonings can penetrate the loin and it will help it cook faster. If you prefer, you can use a fork. Coat the loin generously with steak seasoning and then sear on all sides in a hot skillet before transferring to a 400º oven and cooking for about 15 to 20 minutes on one side before turning over to the other side. Old Time Knowledge 2023-02-11 | This Molasses Cake recipe was published in my great-grandmother's "Home Comfort Wood Stove Cook Book." The company started producing wood stoves before the end of the Civil War. This copy of the cookbook comes from the early 1930s, but no doubt, this recipe goes back to the 1800s. Molasses Cake is a very old, traditional southern dessert. I've tried other Molasses Cake recipes but I love the flavor of this one. Quick & Easy Toffee Recipe - Few ingredients & SO delicious! Great idea for Valentines Day! ❤️ Old Time Knowledge 2023-01-01 | Learn how to make easy homemade toffee! This was supposed to get posted before Christmas, but this is good any time of year. It might be a very good idea for Valentine's Day! You'll need a candy thermometer for this one, but it's so worth it! INGREDIENTS1 cup butter1 cup sugar1/2 tsp. salt1 cup chocolate chipsCrushed pecans (optional)INSTRUCTIONS1. Line a rimmed baking sheet with parchment or wax paper and grease it with butter. Set aside until toffee is ready to pour.2. Melt butter, sugar, and salt in saucepan stirring constantly until butter is melted.3. Bring mixture to a boil then stop stirring (except maybe a few times) and keep it boiling until candy thermometer reaches ~285-290º.4. As soon as toffee mixture reaches the right temperature, pour in greased baking sheet.5. Sprinkle chocolate chips all over hot toffee and let it sit for a few moments until it softens. Once it softens, spread melty chocolate chips around toffee until surface is covered.6. If desired, add crushed nuts on some or all of the chocolate layer. (I like to do half with and half without.)7. Place pan in fridge for about an hour until it sets and then it take out and either break into pieces or use a sturdy knife to score toffee and cut into squares. Enjoy!

You can make these ahead and reheat them for about 15 minutes before serving. All you're doing is putting a little bit of cheese on a Club cracker (or your favorite cracker) and wrapping it with half a slice of bacon and baking in a 250º oven for ABOUT 2 HOURS. Keep an eye on them. You can adjust as needed, but definitely do not go over 2 hours.Enjoy!
Sausage Balls Recipe! Old, hidden recipe card reveals beloved family recipe! Easy Appetizer! 🎄😋 Old Time Knowledge 2022-12-12 | This is an easy Christmas appetizer, ideal make-ahead food for the holidays. I published a sausage ball recipe a couple of years ago and it is one I've been using for probably close to 10 years, but I recently found a stack of recipe cards that were given to me by family members DECADES ago. I was in my early 20s and I'm in my late 40s now, so we're talking almost 30 years ago. This particular recipe came from my Aunt Belle and I was a little skeptical since it uses less cheese and more Bisquick, but her sausage balls always were delicious so I didn't hesitate to give it a try. THESE ARE IT, Y'ALL! These are so good! Way better than that other sausage ball recipe, and that other one was also delicious! These add paprika (and I added in some cayenne, even though it wasn't in the recipe.) If you want, you can add more cheese, more sausage, or less bisquick, but I think adding in the teaspoon of paprika and not using that full pound of cheese really makes for a better sausage ball. INGREDIENTS1 lb sausage, mild or hot10 oz grated cheese (in this video, I'm using an 8 oz block that I grated, so not quite 10 oz.)3 cups Bisquick (I'm using Great Value brand since Walmart was out of Bisquick)1 tsp. paprikaI also added a few shakes of cayenne. If you need to add in some water to bring everything together, you can do that, but probably no more than about 1/4 cup.Once it's all mixed together, form into little balls and bake in 350º oven for about 10-12 minutes. You can enjoy this for the holidays, or anytime of year. She usually makes this with sugar free Jello, but you could use sugar free or regular. Just use a small box for this particular recipe and just double the other ingredients if you use a larger box of Jello.INGREDIENTS1 can whole cranberry sauce1 small box strawberry or cherry Jell-O (regular or sugar free)1 cup hot water1/3 cup finely chopped celery1/4 cup toasted chopped pecansOrange zest (optional)INSTRUCTIONS1. Boil one cup of water then remove water from heat and add Jell-O packet to mix until it's dissolved. 2. Add in can of whole cranberries, chopped celery and pecans, and if desired, some orange zest.3. You don't even need a precise recipe. You just need to understand the principles of how it's made. You're using regular corn meal, salt, and water. If you like sweet cornbread, you can also add sugar. Some people call this hot water cornbread, but we never bothered with using hot water to make this. It turns out the same with room temperature water.The main thing to remember is make a batter that you like the taste of and then thin it out to make a crispy cornbread. The thicker the batter, the thicker (and chewier) your cornbread will be. Easy Lemon Chicken Piccata Recipe - SO DELICIOUS! 😋 Better than a restaurant! Old Time Knowledge 2022-09-03 | This easy Lemon Chicken Piccata Recipe is one of our ABSOLUTE FAVORITE things to eat for supper. And it's so easy! I use one pan and one pot for everything. This recipe does call for capers, but if you can't find capers or you're just skeptical about them, you don't have to use them. I do recommend them, though. They make this dish extra special.Here's how to make it.INGREDIENTSFor the chicken:• Boneless, skinless chicken breast, diced (I use about 1 lb for this recipe)• 1/2 cup flour• 1/4 tsp. salt (+ more to taste when done)• 2 Tbsp. olive oil (+ more if needed)For the sauce: • 1 tsp. minced garlic• 1 cup chicken broth (I use chicken stock base + water)• 1/4 cup lemon juice• 3 Tbsp. butter• 2 Tbsp. capers, drainedAlso you'll need a box of your favorite pasta (I use angel hair) and a jar of your favorite pasta sauce. (I like Bertolli Garlic & Olive Oil.) You also might need a little bit more olive oil to ensure your chicken is all cooked through, as well as some salt to taste for the chicken. INSTRUCTIONS1. Preheat oven to 180º F (or no more than 200º F) to keep chicken warm once it's cooked.2. Mix 1/2 cup flour and 1/4 cup salt then lightly dust diced chicken.3. Heat 2 Tbsp. olive oil in skillet and cook chicken until done. Don't crowd the pan. Cook in batches and keep cooked chicken warm in oven.4. Once chicken is done, use same pan on low or medium low to heat garlic until fragrant. (Note: If pan has a bunch of oil in it when you're done cooking chicken, blot some out with paper towels. If the bottom of the pan has too much flour stuck to the bottom so that the whole bottom of the pan is brown, you might actually need to clean the pan a bit before adding a bit more oil. Too much of anything is going to make a less-than-pleasant sauce.)5. As soon as garlic is fragrant, add 1 cup chicken broth and continue to stir, breaking up bits of flour at bottom of pan. Continue cooking until it begins to thicken. Once thickened, add lemon juice. Stir and continue heating. Just before you're ready to serve, add butter to melt and and add in capers and heat through. 6. Heat up pasta sauce in a separate bowl.7. Once pasta is cooked, assemble everything and serve. Pasta with pasta sauce. Chicken beside it with lemon caper sauce. Enjoy!

Mix together all ingredients, beginning with flour and butter, then add in the milk.3. Work dough until it is all together in a nice ball. You aren't kneading it like you would yeast bread, but you do need to press the dough together so it's all sticking and holding together well.4. Pinch off a ball of dough, flatten it on your hand, and press some cheese in the center. Pull the edges of the dough up around the cheese and pinch together before putting the seams face down on your baking pan.5. PREPPER PANTRY How to Can Collard Greens SOUTHERN STYLE recipe (ham hocks or side meat) #prepping Old Time Knowledge 2022-06-08 | I didn't plan to make a video about canning collards with seasoning meat, but when I started making this batch of collards to make use of what's coming out of my garden, I decided it was a great time to answer a viewer request. Initially, this was just going to be about cooking collards with a DIFFERENT meat than I normally use for seasoning. Typically I use streak of lean (salt pork) or ham hocks, but this time I decided to try using side meat.The flavor of the broth from the side meat is good, but I did have to add salt, whereas when I use ham hocks or streak of lean, I typically don't need to add salt. While I didn't intentionally add the meat that I used in this video to the jars, you would use the same process if you were using a better meat (like ham hocks or streak of lean) — assuming you are using quart jars! The processing time is the same for collard greens AND meats so 90 minutes per jar. Preheat oven to 425º. 2. Roast pork cubes for about 30 minutes or until it’s beginning to brown.3. While pork is roasting, make broth with all the other ingredients.4. Bring broth to a boil, then turn down to simmer for 5 minutes.5. When pork is ready, time to get everything in jars. Add pork first, then broth. (I get onions from broth first to ensure even distribution, then ladle the broth on top.)6. Debubble jars.7. Clean rims of jars with vinegar, add lids and rings.8. Process pints for 75 minutes and quarts for 90 minutes at the appropriate pressure for your altitude. (See this chart https://nchfp.uga.edu/how/can_05/strips_cubes_chunks.html)9. Once jars are done processing and pressure in canner has naturally dropped to zero, leave jars in canner for 10 minutes before removing them from canner and cooling them.Be sure once your jars are down to roon temperature that you remove the rings and wash the jars before storing them in your pantry.

You can use regular lasagna noodles. You don't have to buy the "oven-ready" kind. I first learned about this decades ago because my aunt used to make it for family reunions. I couldn't believe it when she told me it was the recipe from the back of a Mueller's pasta box!Here is the full recipe, exactly as it appeared on boxes of Mueller's lasagna decades ago:INGREDIENTS8 oz. (1/2) package Mueller's® Lasagne, uncooked15 oz. Ricotta cheese or 2 cups cottage cheese2 cups Mozzarella cheese, divided1/2 cup Parmesan cheese2 eggs, lightly beaten6 1/2 cups (52 ounces) of your favorite pasta sauce1 lb. ground beef or Italian sausage, cooked and drained1 tsp. parsley flakesINSTRUCTIONS1. Preheat oven to 350º2. In medium bowl, combine Ricotta cheese, 1 cup of Mozzarella cheese, Parmesan cheese, and eggs; mix well.3. In separate bowl, add browned meat to pasta sauce; mix well4. Spread 1 cup of meat sauce mixture in 9" x 13" pan5. Place 1/3 of the uncooked Lasagne noodles over sauce. Spread 1/2 of the cheese mixture over noodles, top with 1/3 of meat sauce mixture.6. Repeat layering. Top with remaining noodles and meat sauce mixture.7. Cover with foil. Bake 55 minutes. This quintessential southern pie is a perfect spring or summertime dessert, although it's delicious anytime! It's super easy to make. You really can't get it wrong! And you just need a few ingredients. Some people keep this refrigerated (like myself). Others keep it out on the counter. Do what you like, but regardless of how you store it, I can't imagine it will be around longer than a day or two! PREPPER PANTRY - How to Can Sausage - Shelf-stable for quick meals and helps save money! #prepare Old Time Knowledge 2022-04-22 | I rearranged my freezer a couple of days ago and found some country sausage I bought last winter — a 5 lb box of rope sausage — and I decided to take out it out of my freezer, remove it from the casings, fry it up, and pressure can it. This will be a great shelf-stable meat to have on hand. I decided to can it in smaller jars — mostly half-pint jars, but also a couple of 12 oz. jars and a single pint jar. Why? Because a lot of times when we use sausage, we just need a little bit and end up freezing the rest anyway. The most recent versions don't have this, but it's a classic and so delicious! The recipe says it yields about 6 pints or 3 quarts, but the way I make it, I wind up with 10 pints. Your mileage may vary!INGREDIENTS5 lbs. ground beef (I use 80/20)2 cups chopped onions1 clove garlic, minced (I use a couple of heaping Tbsp of minced garlic)6 cups canned tomatoes and juice (I use two quarts of my home-canned Roma tomatoes and I added an 8 oz. can of tomato sauce)1 tsp. cumin1 1/2 Tbsp. salt1/2 cup chili powder1 hot red pepper, finely chopped (optional -- I don't use this)1. Brown meat and drain off fat. 2. Add onions and continue cooking. 3. Add remaining ingredients, then cover and simmer for 20 minutes.4.
