Same-Day Sourdough Bread Recipe (No Overnight Rest!)

In this video, I’ll show you how I prepare a rye starter from my regular sourdough starter, make the preferment, mix the final dough, proof it, and bake a simple homemade rye loaf.
Rye Starter – prepare the night before
-20 g active sourdough starter
-80 g filtered water
-80 g rye flour
Preferment
-180 g prepared rye starter
-150 ml room-temperature water
-50 g rye flour
Final Dough
-All of the preferment
-150 ml room-temperature water
-320 g rye flour
-8 g kosher salt
For finishing
-About 1 tsp salted butter
Bake at 485°F for 15 minutes, then reduce the temperature to 390°F and bake for another 25 minutes.

Ingredients
Berry Purée:
-About 250 g frozen berries
-1 tbsp lemon juice
You’ll need 180 g finished berry purée total:
120 g for the ganache
60 g for the berry center
Gelatin:
-1 tsp gelatin
-2 tbsp cold water
Berry Mousse:
-120 g berry purée
-110 g white chocolate
-100 g heavy cream, heated
-Half of the bloomed gelatin
-100 g cold heavy cream
Berry Center:
-60 g berry purée
-100 g fresh raspberries
-15 g sugar
-Remaining half of the bloomed gelatin
Chocolate Coating:
-80 g cocoa butter
-120 g white chocolate
-Red or pink fat-soluble food coloring
Freeze the assembled desserts until completely solid — I prefer to leave them overnight — before removing them from the molds and coating them.

• 100 g white chocolate (30%+ cocoa butter, ideally 33–34%)
• 160 g heavy cream (30%+ fat)
• 2 g gelatin
• 10 g cold water
• Vanilla paste or vanilla sugar, to taste
How to make it:
1. Soak the gelatin in cold water for 3–5 minutes.
2. Heat the heavy cream with vanilla until almost boiling. Remove from heat, add the bloomed gelatin, and mix well.
3. Pour the hot cream over the white chocolate. Blend with an immersion blender until completely smooth.
4. Cover with plastic wrap directly touching the surface and refrigerate for 5–6 hours.
5. Whip on high speed for about 40 seconds, or until fluffy and stable.

For the Sponge Cake:
4 large eggs, separated
100 g (3/4 cup) all-purpose flour
150 g (3/4 cup) sugar
1 tsp vanilla extract
Pinch of salt
For the Soaking Syrup:
100 g water
60 g sugar
1 tbsp vanilla extract
For the Strawberry Frosting:
212 g strawberry cream cheese
400 g cold heavy whipping cream
80 g powdered sugar, or adjust to taste
1 tsp vanilla extract
You can also use regular cream cheese instead of strawberry cream cheese.
For the Filling & Decoration:
About 1 lb fresh strawberries
🍰 Important Tips
Make the sponge cake the day before assembling the cake and refrigerate it overnight.
Make sure the sponge is completely cooled before wrapping it in plastic wrap.
Dry the strawberries very well before adding them to the cake so they don’t release too much moisture into the filling.

-1 cup heavy cream

Strawberry pieces
-100 g fresh strawberries, diced
-2 tablespoons granulated sugar
Chill the strawberry purée and custard completely before combining and churning. For the best texture, freeze the finished ice cream for at least 4 hours, then let it sit at room temperature for 5 to 10 minutes before serving.

Bake at 355°F / 180°C for ~10 minutes on a 17x11 inch tray lined
with parchment.
🍦 CREAM
- 300g cold heavy cream
- 100g powdered sugar
- 300g sour cream
Whip cream + powdered sugar to hard peaks, then fold in sour cream.
🌰 TOPPING
- Cake scraps
- 70g walnuts
Blend together until fine crumbs.

1/2 cup (113g) very cold unsalted butter
1 tbsp poppy seeds
Zest of 1 lemon
1/2 cup (120ml) heavy cream
1/4 tsp vanilla extract
LEMON GLAZE:
1 1/4 cups (160g) powdered sugar
1 1/2 tbsp lemon juice
1 1/2 tsp water
1/4 tsp vanilla extract
(+ extra lemon juice to reach desired consistency)

📝 Ingredients (2 breads 560g):
Yeast mixture:
260 ml warm milk
100 g sugar
5 g instant yeast
500 g strong flour (13% protein) — use only 1 cup for the yeast mixture
Dough:
2 eggs
3 egg yolks
1/2 tsp vanilla extract
1 tsp salt
Remaining flour
70 g butter (soft)
Zest of 1 orange
Dried fruits:
115 g dried apricots
93 g raisins
50 ml orange liqueur (or whiskey / juice / water)
50 ml hot water
Syrup:
50 g sugar
50 g water
You can also add a little vanilla or a splash of orange liqueur for extra aroma, if you like.
Bake at 340°F for 20 minutes and at 320°F for another 20 to 30 minutes
Make sure the top isn’t burning — if it starts to brown too quickly, just cover it loosely with foil.
The internal temperature of the Paska should reach about 194°F.

💡 TIPS FOR SUCCESS
✔ Cold cream = better whipping. Chill your bowl & beaters first.
✔ Room-temp mascarpone blends smooth — don't skip this step.
✔ Dip ladyfingers quickly (1 second per side) — soggy = disaster!
✔ Chill for at least 4 hours. Overnight is even better.
✔ Dust extra cocoa right before serving for the best look.

1 ¼ cups lukewarm water (≈ 300 ml)
1 ⅛ tsp instant yeast
1 tbsp barley malt syrup (for the dough) - No barley malt syrup? Molasses or honey work as substitutes.
3 ¼ cups bread flour (11% protein)
½ cup whole wheat flour
1 ½ tsp kosher salt
Boiling water:
½ tsp baking soda
2 tbsp barley malt syrup
Toppings:
Everything seasoning, sesame seeds, poppy seeds, or your choice

WHAT MAKES THESE SPECIAL:
The secret is using buttermilk AND sour cream together - this dual dairy approach creates biscuits that are impossibly flaky on the outside and incredibly tender on the inside. Plus, we're using a food processor to keep that butter cold and create perfect layers every time!
INGREDIENTS (Makes 8-10 biscuits):
2 cups all-purpose flour
1/4 tsp baking soda
1 tbsp baking powder
1 1/2 tsp salt
113g (1 stick) cold unsalted butter, cubed
1/2 cup buttermilk (cold)
1/2 cup sour cream (cold)
PRO TIPS:
✓ Don't have buttermilk? Mix 1/2 cup milk with 1/2 tsp vinegar, warm it up slightly, and let it sit for 5 minutes - perfect substitute!
✓ Keep your butter, buttermilk, and sour cream COLD - this is crucial for flaky layers
✓ Don't twist your biscuit cutter - press straight down for maximum rise
✓ Don't overmix the dough - shaggy is perfect!
SERVING SUGGESTIONS:

Sponge Cake:
4 eggs
120 g sugar
115 g all-purpose flour
5 g baking powder
Vanilla extract
70 g walnuts, lightly toasted and chopped
A pinch of salt
Caramel Cream:
340 g cream cheese, room temperature
380 g caramel (dulce de leche / boiled sweetened condensed milk)
50 g heavy cream (plus more if needed for consistency)
For Assembly:
Milk, for soaking the sponge
Extra chopped walnuts, for decorating
Bake at 160°C (320°F) for 20–25 minutes
If the center is still jiggly, bake 5–10 minutes longer
The sponge is ready when lightly golden and springy
Internal temperature: about 194°F (90°C)
