For this recipe, we’re using Enjoy Life Ricemilk and Dark Chocolate Chips which are perfect for this recipe, but don’t forget their Regular and White Baking Mini Chips this holiday season too!

Recipe:
For the Cake
* 1 cup dairy free milk
* 1 tbsp apple cider vinegar
* 2 tsp vanilla extract
* 1 tsp peppermint extract
* 2 1/2 cups Gluten Free 1:1 flour
* 2 cups vegan cane sugar
* 1 cup cocoa powder
* 2 tsp baking powder
* 1 1/2 tsp baking soda
* 1 1/2 tsp salt
* 1 1/2 cups boiling hot water
* 3/4 cup neutral oil
* 2 cups Enjoy Life Ricemilk chocolate chips
For the Peppermint Ganache Topping
* 1 cup Enjoy Life Dark Chocolate Chips
* ½ cup non-dairy butter
* ½ cup crumbled peppermints, more or less to taste
Directions
1. Preheat the oven to 350F and grease liberally a 12cup bundt cake pan.
2. Combine dairy free milk, apple cider vinegar, and both extracts to make vegan buttermilk. Set aside.
3. Use a large bowl and hand whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
4. Next add boiling water, oil and vegan buttermilk (vinegar mixture from step 2). Mix with a spatula until just combined.
5. Pour batter into prepared pan and bake them together for about 38 - 42 minutes or until a toothpick in the center comes out clean. Let cool for 15 minutes in the pan, then remove and let cool to room temp before topping.
6. For the topping, melt together chips and butter. Place in fridge for 10-15 minutes to solidify slightly but still pourable. Drizzle over the top of the cake, then top with crushed peppermint.
7. Cut and serve.
