I planned to have a Rotisserie Turkey. It weighed 20 pounds. It was too heavy for the motor to turn it. I ended up changing the setup to a traditional grate cook on the WSM fire in the bottom. The video shows kidney pans on each side, but because I forgot to open the top vent the fire went out due to no oxygen. It had gotten the temp up in the smoker to 230, but I was looking for 350-400. I wound up building another fire in the bottom with lump charcoal and did the cook with that which did fine. The charcoal in the side pans on the higher level nevel did come back. I didn't realize that until later. The first 45 minutes was lost until this got worked out. It took a little longer to get the bird done due to this. All ended up well with a beautiful Turkey.
GARLIC BUTTER (for under skin)
1 stick butter
Pinch cayenne
Pinch salt
2 cloves minced garlic
Mix well and put in fridg
Injection
1/2 Cup chicken stock
1 stick butter
1 Tbsp hot sauce
1 tsp garlic powder
1 tsp kosher salt
Mix in pot on low heat
Inject the bird
apply the garlic butter under tje skin
Stuff the turkey with herbs, citrus, onion, celery, apple
Apply olive all over skin
Rub
Ground black pepper
Kosher salt
Oregano
Thyme
Baste
1 cup olive oil
1 cup chicken broth
1 stick butter
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp granulated garlic
1/4 tsp onion powder
1/4 tsp oregano
