I’m Todd Wilbur. I’ve been hacking famous foods for over 30 years. Whenever I set out to duplicate a recipe, I start by tasting the real dish and asking a ton of questions. Sometimes I get a few helpful tips and sometimes…nothing. I don’t often get threatened by jail time, but the servers at Du-Par’s are very protective. 😂
Du-par’s Restaurant and Bakery first opened at the Los Angeles Farmer’s Market in 1938. Their hotcakes are legendary. And the recipe is a closely guarded secret.
Since my server was sworn to secrecy. I was going to have to start
from scratch. The first thing I noticed is the weight of each pancake and the extra large size. The density and creaminess may mean I’ll need several eggs. I also noticed lots of butter soaked into the batter.
With my sample order of pancakes secured in my to-go bag. I’m ready to try my first batch. I’ll begin by using a standard buttermilk pancake recipe, then add several eggs and plenty of buttermilk. I’m pretty sure I can do something no one has yet accomplished…I’m going to Hack That Dish!
