It's common to find pancake mix in many copycat recipes for Shakey's Mojo Potatoes. Pancake mix is full of sugar and creates a potato that's too sweet. I'll try a wet batter, like the one used on Arby's Curly Fries and see if I can get closer to duplicating the real thing.
