Whipped up this delicious White Bean and Miso Soup with some leeks and spinach. It's quite easy to make and can be adapted to suit your own flavors or ingredients on hand. This should cost you under $7 for the whole pot!
Recipe:
- 3 tbsp of Olive Oil
- 1 Medium onion (1 cup chopped)
- 3 cloves of garlic (minced)
- 3 cups of leek (1 sliced)
- 1/2 tbsp of salt
- 1 tbsp of cracked black pepper
- 1 Can of Cannellini Beans
- 4 cups of water
- 1 tsp of oregano
- 1 tsp of thyme
- Juice of half lemon
- 2 tbsp of Miso Paste
- 3 cups of spinach
- Green onions or parsley for garnish (optional)
Instructions
1. In a large pot, on medium high heat, add olive oil and onions. Fry for 1- 2 minutes to brown onions, then add garlic, and leeks, and fry for another 2 minutes. Next add the white beans, water, spices and lemon juice, and mix everything together. Set heat to low to simmer for 20 minutes.
2. Turn off the heat, and add miso paste. Mix it in so that it dissolves. Then add spinach and mix around till spinach wilts.
3. Serve and garnish with cracked pepper to taste, and parsley or chives.

3 Cloves of Garlic (Chopped)
2 Tablespoons of Tomato Paste
2-3 Cups of Hot Water
1 Lemon (Squeezed)
Salt and Pepper to Taste
Recipe:
- Fry the Onions in a Tablespoon of Olive Oil, on medium high heat.
- Add Tumeric, and Salt to Taste.
- Make space for the beef, and add it to the Pan. Brown Beef on each side.
- Add Bell Peppers, Garlic, Tomato Paste, Lemon, Salt, Pepper, and water just below covering the beef and mix it around. Cover with a lid and cook for 1 hour, on low.
-Slice the eggplant to a 1/2 inch thickness, salt one side and leave to rest for 20-30 minutes. The eggplant should sweat out, and you can pat them down with a paper towel to remove bitterness. Fry eggplant slices in Olive Oil in a separate pan. Fry both sides till brown and soft. When fully cooked, add eggplant to stew.
- After 1 hour, check the stew, the meat will likely still be tough. Add water if necessary (all water is evaporated). Then cook for another hour to hour and a half, or till meat is tender.
