I recently went to New Orleans for my bachelor party and ended up eating an unreasonable amount of Po’ Boys from Domilise’s (a legendary shop that’s been slinging sandwiches for over a century.) This experience inspired me to dive into the world of New Orleans’ most iconic sandwich. So today, we’re recreating 5 classic Po’ Boys, tasting each one, and ranking them to crown a king. Because the Po’ Boy isn’t just dank, it’s a key part of America’s culinary identity, packed with history, flavor, and Nawlin’s pride. Shoutout Lil Wayne. Let’s git it.
Softshell Crab Batter:
2 cups self-rising flour (240g)
3 cups rice flour (400g)
1½ cups vodka (345ml)
2⅓ cups beer (550ml)
2 Tbsp honey (42g)
2 tsp Baking Powder
Cornmeal, TT
1. In a large bowl, whisk together self-rising flour and rice flour until fully combined.
2. In a separate container, mix vodka, beer, and honey until the honey is dissolved.
3. Gradually pour the liquid into the dry ingredients, whisking gently to form a smooth batter.
