It's What I Ate Wednesday; the show where I share all my tasty vegan eats in a day. On this day, vegan breakfast starts with fluffy pancakes and grass jelly milk tea. Lunch is a creamy eggplant curry and I try out Walnut "Chicken" for dinner. Scroll down for all the recipe links and more details.

*I used frozen raspberries instead of blueberries

Grass Jelly Milk Tea:
*grass jelly (amzn.to/2IWerUl), red rose tea, and silk soy creamer original flavour

Eggplant Tomato Curry Recipe: goo.gl/sDEoE9
*here are the ingredients I actually used:
340g eggplant
360g tomato
40g green onion
6 cloves garlic
250ml coconut milk
2 tbsp curry powder
1/2 tsp turmeric
1/4 tsp fenugreek seeds
1 tsp salt
3 tbsp lemon juice
2 tbsp mango powder (amzn.to/2LgYoyG)
2 tbsp brown sugar
1 cup kidney beans
1 tsp red chilli flakes

*I used twice frozen medium firm tofu to replace the chicken and used some of the sauce ingredients as a marinade and skipped the green onions, added some onion powder

Ginger Garlic Rice Noodles + Kale:
big handful dried rice noodles
1 tbsp grated garlic
1 tbsp grated ginger
2 tsp soy sauce
2 cups kale
