Villagers behavior in this update is not normal. You can provide them jobs/workstations and cycle through them at any time of the day. Accepting a workstation can take more time than usual. I'm sure this will change, so be ready for the fix and enjoy the relaxed workstation mechanics while you are in these versions ^^*
Villagers and Workstations. We have come a long way since the days of 1.14 and swapping of workstations.
