This Saturday (March 17th) is St. Patrick's Day! What better way to celebrate it than with an American tradition? Though it may not be traditionally Irish, McDonald's puts out something they call a "Shamrock Shake" every St. Patrick's Day, but those shakes contain milk, which means that vegans don't get to enjoy this minty treat. Luckily, Maguire and I have come up with a homemade, vegan option that uses soy ice cream and almond milk to create a substitute that's just as tasty and can be enjoyed for St. Paddy's Day or any time of year.
Vegan Shamrock Shake
Ingredients
3 scoops vegan ice cream of your choice (we used soy)
1 cup to 1.5 cups vegan milk (we used almond milk)
Peppermint extract to taste
(Optional): Green food coloring
Combine all ingredients in a blender and blend until smooth and creamy. Serve immediately.
