Potato Pea Curry
5-6 large potatoes, peeled if you want, cut into chunks
1-2 cups frozen peas
1 can diced or crushed tomatoes
1 onion, diced
1 green chili or jalapeno diced, seeded if desired
2 cloves garlic, minced
1 inch ginger minced or grated or pureed
2-4 tbsp cooking oil
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
2 tsp garam masala
1/2 tsp cumin powder
red pepper flakes or cayanne pepper powder to taste
salt to taste
1/2 bunch chopped cilantro
heat oil, add spices and stir fry for 30 seconds, add onions and jalapeno, cook 5-7 minutes until veggies start to soften, add ginger and garlic, cook another 30 seconds. Add canned tomatoes plus 1 can of water. Add potatoes, bring to a boil, reduce heat to a simmer and cook 7 minutes or until the potatoes are almost fully cooked. Add peas and cook another 2 minutes until peas are cooked. Mash some potatoes if you want thicker gravy, you can add more water if you want it thinner. Garnish with cilantro. Serve with rice, flat bread or as a side dish
