This is the best granola I've ever made, so I really hope you give this Vegan Chocolate Granola Recipe a try! I've been loving it on top of my oatmeal or just on it's own with some berries and soy milk.

VEGAN CHOCOLATE GRANOLA RECIPE:
2 1/2 cups quick oats
1/2 cup almonds, chopped
1/2 cup seeds
1/2 cup shredded coconut
1/4 cup cocoa powder
3 tablespoons coconut sugar
pinch of salt
1/4 cup coconut oil, melted
1/3 cup liquid sweetener
1/2 cup cacao nibs or mini chocolate chips
Preheat your oven to 120F and line a baking tray with parchment paper or a silicone baking mat.
In a bowl, mix together the dry ingredients, from the oatmeal to the salt.
Add in the maple syrup and coconut oil and mix until all the oats and seeds are coated.
Spread the oat mixture evenly on the baking tray and bake for about 40-45 minutes. Start with the tray on the top rack of your oven. After 15 minutes move the tray to the bottom rack. At the 30 minutes mark, remove the granola, stir it, and then place it back in the oven on the top rack for another 10-15 minutes.
Remove from the oven and allow to cool.
Stir in the cacao nibs or chocolate chips.
Store in an airtight container.
