Don't have an ice cream machine? You can still make this Vanilla Rum Ice Cream! This ice cream is really quick and easy to mix up, then you just pop it into the freezer.
Ingredients:
2/3 cup sweetened condensed milk
2 tbsp good quality spiced rum
1 tsp vanilla extract
1.25 cups heavy whipping cream
Directions:
Combine the sweetened condensed milk, spiced rum, and vanilla extract in the bowl of a stand mixer (or, you can just use a hand mixer). Mix these ingredients together for a couple minutes to combine.
Add in the heavy whipping cream, and whip for about 5 minutes until the mixture is thick and has reached the stage of soft peaks. You check for soft peaks by lifting the beaters straight out of the bowl and flipping it rightside up, and the cream's tip should fall slightly to the side.
Pour this mixture into a container and freeze for at least 6 hours. Scoop and serve. Enjoy!
