This honey cake is proof that you don't need hours in the kitchen
to make something truly special. One pan, simple ingredients,
and about 30 minutes of active time — then the fridge does the rest.
The layers soak up the cream overnight and become unbelievably soft
and delicate. It's the kind of cake that tastes like it took all day.
⬇️ FULL RECIPE ⬇️
🍯 CAKE BATTER
- 150g butter
- 90g sugar
- 100g honey
- 1 tsp vanilla extract
- 1 tsp baking soda
- 2 eggs
- Pinch of salt
- 200g all-purpose flour
Bake at 355°F / 180°C for ~10 minutes on a 17x11 inch tray lined
with parchment.
🍦 CREAM
- 300g cold heavy cream
- 100g powdered sugar
- 300g sour cream
Whip cream + powdered sugar to hard peaks, then fold in sour cream.
🌰 TOPPING
- Cake scraps
- 70g walnuts
Blend together until fine crumbs.
⏰ Chill for at least 4 hours — overnight is even better!
