I bet, now you know that I love Tzatziki... So here's a cool small dessert or smth that you can serve to your guests at the end of the meal.
Here's how to make Tzatziki Rocks.
Ingredients:
- 60g Liquid glucose
- 180g Isomalt
- 10g Baking soda
- 100g Dark chocolate
- Tzatziki powder (check out my Savoury Meringue video to learn how to make it).
- Kosher salt
Directions:
1) Mix glucose and Isomalt in a small pot with a thick bottom. Melt the mixture down.
2) Bring the internal temperature of the mixture to 325F / 162C.
3) Mix in Baking soda and immediately pour the mixture on a silicone baking mat. Let it rest for about 30 min at room temperature.
4) Melt down the chocolate.
5) Cut the Sponge toffee into small chunks.
6) Dip each toffee chunk into melted chocolate (2 times).
7) Sprinkle with Tzatziki powder and salt.
8) Store in the fridge in the airtight container.
