Vegetable Soup
2 TBSP butter or olive oil
1 finely chopped onion
1 cup each of carrot and celery
1 cubed potato
5 cloves garlic minced
1 tsp each of thyme and oregano
1 bay leaf
6 cups chicken stock
2 cups beans drained (any type)
1 cup corn
the original recipe also calls for a cup of asparagus tips but I didn't add them this time
salt and pepper
Heat the butter or olive oil over medium heat and cook the onion, celery and carrot for about 5 minutes. Add in everything else and let simmer for 20 minutes.
