There are three ways to escape the cell in Metal Gear Solid after the torture sequence:

00:00:00 - Hide under the bed
00:01:17 - Using ketchup
00:02:00 - Waiting to be bust out

The first two methods are quite similar - tricking the guard into opening the cell.

To hide under the bed, wait until the guard isn't looking (so is either in the bathroom, or is asleep) then crawl under the bed. When they come in to investigate, you can choke them and flee.

To use the ketchup in Metal Gear Solid, equip the item, lay on the ground, then press the Circle button when the guard isn't looking. Now remain still until the guard spots you and opens the door. Now choke them and flee.

Finally, you can wait until (spoilers) comes and breaks you out of the cell. For this to happen, you must have one failed escape attempt, and wait around 10 minutes for the guard to leave for the bathroom again.
