Blueberry cheesecake loaf
Serves 8 | Prep 10 mins (+ 5 mins cooling time) | Cook 55 mins
1 cup (90g) Coles Rolled Oats
2 cups (300g) Coles Wellness Road LSA Meal
8 scoops (140g) Coles PerForm Vanilla Flavour Whey Protein
½ cup (110g) Coles Caster Sugar
1 cup (200g) Coles Low Fat Creamed Cottage Cheese
½ cup (140g) Greek-style yoghurt
3 Coles Free Range Eggs
2 bananas, mashed
125g blueberries
Greek Yoghurt, extra, to serve
1. Preheat oven to 180°C (160°C fan-forced). Grease and line a 9.5cm x 19.5cm (base measurement) loaf pan with baking paper, extending 5cm above the long edges.
2. Blend or process oats to a fine flour. Combine oat flour, LSA, protein powder and sugar in a large bowl. Make a well in the centre.
3. Place cottage cheese, yoghurt and eggs in a blender or processor and blend until well combined and smooth. Add to flour mixture with banana and blueberries. Stir until just combined.
4. Pour into prepared pan and bake for 50-55 mins or until a skewer inserted in the centre comes out clean. Stand for 5 mins before removing from pan and transferring to a wire rack to cool. Serve warm with extra yoghurt.
