This Dark Souls 3 Mechanic is INSANE
Dark Souls 3 has a mechanic that you probably wouldn't have seen if you never used a bow or items like throwing knives. Some enemies will recoil when shot in the head. Some enemies even have full head break animations. In the following example I accidentally hit sister friede in the head with a throwing knife.
