MOTHER’S CHOCOLATE CAKE
This cake is better eaten the next day!
With Buttercream or Fudge Frosting, below
Serves 12
2 ¾ cups white Kamut Flour or 3 cups all-purpose white flour.
2 cups sugar
¾ cup Belgium (Dutch processed) cocoa powder
1 teaspoon French gray coarse salt
1 teaspoon baking soda
½ cup plus 1 Tablespoon sunflower oil or (butter, melted; let cool.) Oil makes for a more moist cake.
1 Tablespoon white vinegar (any kind will do)
2 cups water
1. Into an UNGREASED 9x13 inch pan put flour, sugar, cocoa, salt, and baking soda.
2. Mix with a fork or the FN dough hook until no white shows.
3. Add oil or melted butter, vinegar and water. Mix until combined.
4. Bake at 350 degrees for 27-35 minutes or until a toothpick comes out with a little crumb on it.
5. Remove from oven and place on cooling rack.
6. Frost with Buttercream frosting when the cake is cooled or Fudge Frosting while the cake is still warm.
7. Cover with plastic and place in refrigerator. Place toothpicks around so the plastic won’t touch the frosting.
