🌾Ezekiel Grains:
Combine in a half-gallon jar:
975 grams hard red
275 grams spelt
95 grams barley
75 grams millet
🌾Ezekiel Bean Variety:
Combine in a quart jar roughly 700 grams of whatever beans you have on hand (I use kidney, great northern, and pinto).
🌾Ezekiel Lentil Variety:
Combine in a quart jar roughly 530 grams of whatever lentil varieties you have on hand (I like brown, green, and french green lentils).
To make one loaf of Ezekiel bread, weigh out and mill:
285 grams of Ezekiel grains
26 grams of bean variety
19 grams of lentil variety
Ezekiel Bread Recipe
INGREDIENTS
1 ⅓ cups hot water
1 teaspoon salt
2 ½ tablespoon oil
⅓ cup honey
2 ½ cups Ezekiel flour (see above)
1 tablespoon yeast
DIRECTIONS
In the bowl of your stand mixer, mix water, salt, oil, and honey. Add about 2 cups of Ezekiel flour and mix well. Sprinkle yeast over your batter while you continue mixing. Add the rest of your flour and continue mixing the thick batter another 5 or 6 minutes.
Prepare a bread pan by coating the inside in butter, oil, or your healthy fat of choice. Spoon batter into pan, cover, and let rise in a draft-free location for about 30 minutes.
When the batter is almost to the top of the pan, bake at 350 for about 40 minutes or until it’s a golden color and a thermometer inserted in the middle reads 190-200.
