Today, we're baking Chocolate Cake straight from a 1926 Walter Baker cookbook, a company that helped shape chocolate baking in North America. This simple yet rich cake uses beaten egg whites for a light, airy texture and classic Baker’s chocolate for deep, nostalgic flavour.

Baker's CHOCOLATE CAKE Recipe
½ cup butter,
¾ cup sugar,
¾ cup milk,
½ teaspoon vanilla,
3 egg-yolks,
3 ounces Walter Baker & Co.'s Premium No. 1 Chocolate,
1¾ cups flour,
3 teaspoons baking powder,
3 egg-whites.
Cream butter, add sugar gradually, then beaten yolks, milk, vanilla and chocolate, melted. Mix and sift flour with baking powder and stir into the liquid. Fold in the stiffly beaten whites last. Turn into buttered shallow cake pans and bake in a moderate oven about twenty minutes.
