Thionin is a complex organic molecule that can really take two chemically distinct forms: Blue when oxidized, and colorless when reduced. To reduce it, the molecule must be in an acidic solution, and have a reducing agent, such as the Iron II ion. The reaction, though, is reversible. To get it to happen, some energy in the form of light is required, and as soon as the light is removed, the reaction will revert back to the original ingredients. You have to see it to believe it!
