If you’ve got extra sourdough starter sitting in your fridge, don’t toss it—turn it into these delicious, soft crepes with a subtle tang and a hint of vanilla. They’re quick to make and perfect for breakfast, brunch, or even dessert!

This is one of my favorite ways to use up a large amount of discard without waste. The texture is light and flexible, and you can customize the toppings any way you like—jam, whipped cream, honey, maple syrup… whatever you love!

✨ Ingredients:

3 eggs
⅓ cup (about 65–70 g) sugar
1½ tbsp (about 23 g) neutral oil
450 g sourdough discard (unfed, straight from the fridge)
1½ tsp (about 7 g) baking soda
1¼ tsp (about 7 g) salt
1 tsp (about 5 g) vanilla extract
450 ml warm milk (about 1¾ cups)
6 tbsp (about 75 g) flour, sifted

🧈 Optional: Spread a bit of butter between crepes if serving immediately. If storing in the fridge, skip the butter to prevent sticking.
