Chicken Marbella
4-5 pounds bone in skin on chicken legs or thighs
1/2 cup olive oil
1/2 cup vinegar
1 cup wine
3/4 cups olives
1/4 cup capers with some brine
4-5 cloves garlic
1/4 cup sugar
1 cup pitted prunes chopped into chunks
1 TBSP oregano
2 tsp salt
pepper to taste
Lay chicken in a single layer in a baking pan. Combine all the other ingredients, pour over chicken and let rest 3 hours to overnight. Bake at 375 degrees for about an hour.
