Salted fish fried rice is one of those dishes that doesn't sound particularly special, but is surprisingly delicious and satisfying, and it's one of my all time favourite fried rices EVER.

Traditionally you salt-cure a big piece of fish, cook it, then cut it up for the fried rice. But here I went for a 15-minute shortcut, which is the version in my book SABAI, where I dice the fish small before salting so the timing is greatly reduced. Same big umami payoff, way less waiting.⁠

It's savory and deeply comforting. You can use any firm fish, but being on the West Coast, salmon is my go-to — and it works beautifully.⁠
