Pad Woon Sen is a noodle dish Thais eat regularly at home because it's so easy and tasty. Glass noodles, made of mung beans, are such great noodles for many reasons, but my favourite reason is that they're basically failproof. It's nearly impossible to overcook or undercook them. Glass noodles are also very light, and compared to rice noodles they're much lower in calories because they absorb a LOT of water when cooked. In fact, they're so light that this is a dish we eat WITH RICE as part of a family style meal. Yes it's carb on carb at its best!
