The Nobu Miso Cod, possibly the most famous fish dish in the world. It’s a special dish for one, because black cod is hard to find, most of it gets shipped to Japan. But thanks to @Whatnot, I found Black Cod at auction from the fisherman who caught it and it was delivered frozen to my door 2 days later. #Whatnotpartner
Ingredients:
3 6 oz portions Black Cod/Sablefish
3 Tbsp Sake
3 Tbsp Mirin
1/2 Cup White Miso Paste
3 Tbsp Sugar
Directions:
In a pot, add the mirin and sake and bring to a simmer. Add the sugar and miso and simmer until the sugar is dissolved. Allow to Cool.
Portion the fish into 6oz portions. Place in a ziplock bag with the miso marinade, coat the fish and let marinate for 2-3 days.
When you’re ready to cook, turn on the broiler and remove the fish from the marinade and gentle brush off any excess marinade. Then place on a sheet tray and broil for about 8 minutes or until the edges char and the fish has developed nice color. Remove, serve on a bamboo leaf and garnish with chive.
