There are two things that contribute to the bad reputation of the sloppy joe. The first, is its association with cafeteria ladies and the lack of love that is palpable when its slopped onto your plate
The second, is that it is inherently messy...and I don’t like messy sandwiches. It’s like a linchpin of my sandwich-making philosophy. So, how do you maintain all the simplicity of a sloppy joe that gives it that appeal, but do it in a way that is made with love and is less sloppy? I think the answer is a cheese skirt.
