Apothecary - Dallas, TX (2022)
Most bars in Texas want to impress you with the bottle. Apothecary wants to impress you with the science. On Lower Greenville Avenue in Dallas, owners Tanner Agar and Taylor Rause have built something that doesn't really have a comparison anywhere in the state. An avant-garde cocktail lounge where drinks are treated with the same creativity and care that great chefs give their cuisine. Where the bar team uses centrifuges, liquid nitrogen, sous vide, and pyrolysis to make cocktails that numb your tongue, surprise your expectations, and occasionally arrive with an octopus tentacle.
And I'm not kidding about that last one.
Apothecary runs as two distinct experiences under one roof. Archive is where you start. Classic craft, a back bar stacked with hundreds of spirits, a thoughtful wine list, and cocktails built on balance and technique. It's the perfect place to find a new whiskey or have the best martini of your life. Then, when you're ready, they walk you next door to Alchemy. That's where the menu goes somewhere else entirely. Seasonal. Thematic. Full resets every year. In 2024 it was Alice in Wonderland. The Pickle Cheesecake cocktail, vodka with cream cheese and rice wine pickles and graham cracker, is exactly as wild as it sounds and somehow works.
The kitchen is led by the same chefs whose work earned Michelin Guide recognition at their sister restaurant Rye. This is a full dinner destination, not just a place to drink.
