Make a fluffy, jiggly Japanese cloud cake—using just a rice cooker. This cheesecake is light, airy, and easier than you think.

Recipe:

1. Spray the rice cooker pot with nonstick spray and line with parchment.
2. Prepare the batter through Step 5 on our site, then pour into the pot.
3. Cook 25 min on the “glutinous rice” setting (timing will vary by model).
4. Open the cooker, let steam dissipate, place parchment on top, then cook 25 min more until the cake hits 180 °F / 82 °C inside.
5. Cool 10 min, then remove from the mold by inverting onto a plate.
6. Slice and serve right away for maximum jiggle.

Key tips:
- Works best in a multi-function microprocessor rice cooker (like a Cuckoo).
- Induction models may need adjusted timing.
- Single-button or pressure rice cookers won’t work.
