Twelve years ago, we published the recipe for Flourless Carrot Cake, a visually stunning pudding-like riff on the iconic dessert. To accompany the recipe, we put together a video that showed (most of) the processes involved, showcasing some out-there-at-the-time equipment and ingredients (immersion circulators, hydrocolloids). To date, it is one of our most popular videos, with over 1 million views.

In the third installment of our ChefSteps Revisited series, the recipe’s developer, Nicholas Gavin, watches the original video and assesses how everything holds up. Nick adds some additional context, including some interesting pointers for executing the recipe that the original video omitted, and we torture him a little by making him read some of the YouTube comments.
