In honour of the release of Dawn Dew, a steamed Chinese green tea, here’s a little tea history lesson. Green teas back in the Tang Dynasty were steamed to emphasise the purity of the leaf, but this process fell out of favour and was traded for pan frying. Long and laborious, this process builds layers of complexity of flavour that steaming couldn’t replicate. #teaeducation #gongfucha #chinesetea #greentea #tealove
