This was a fun one! There are some really easy punish windows when he does the horizontal spread crossbow shots. Just be sure you have or gain a javelin use, dodge or parry til his stamina is low, and javelin him to exhaust him, then quickly close the gap and slap him around! Other than that, just block or parry the moves as best you can, and fire resist to avoid flame status.
