3 Eggs
1 1/2 cups flour
1 1/2 cups milk
1/2 tsp salt
Preheat your oven to 450°F (230°C).
Crack 3 eggs into a mixing bowl and whisk until smooth.
Add 1½ cups milk and ½ teaspoon salt; whisk to combine.
Gradually stir in 1½ cups flour until the batter is smooth.
Set the batter aside while you prepare your muffin tin.
Add 1 teaspoon oil to each muffin cup. Heat at 425 degrees for 10 minutes
Pour batter into the cups: filling halfway will make 12 popovers; filling about ¾ full will make 10 larger ones.
bake 15-20 min until puffed and golden
