Some of the very best recipes are often the most simple. This is certainly true when it comes to Egg Yolk Waffles! We discovered these beautiful waffles on social media, shared by Sarah (found at carnivore.yogi on Instagram). We’re grateful to her for introducing us to this fabulous recipe and allowing us to share!

Egg Yolk Waffles are reminiscent of “potato bread” with a texture that is soft and fluffy, yet pliable and strong, perfect for encouraging chewing. We encourage you to think outside the box when incorporating these waffles into your meal plans. They are particularly delicious when used along with savory ingredients, such as a replacement for a burger bun or hotdog roll. They hold fat amazingly well and do not feel greasy, even at their high-fat ratio (greater than 4:1). Feel free to use another fat besides butter. Coconut oil, bacon fat, or a combination of fats will all work well.

Egg yolks are among the most nutritious foods owing to their high Vitamins A, D, riboflavin, phosphorus, and selenium content. They’re also high in choline which is necessary for neurotransmitters in the brain.

Egg Yolk Waffles are sure to become a keto staple. Consider multiplying the recipe by six and using a dozen yolks at a time. The cooking time is so quick, it is easy to make a large quantity of waffles. Store extra waffles in your freezer, wrapped tightly in parchment paper then sealed in an airtight bag.
