Tahini Dressing is lemony and bright! It pairs very well with raw or roasted vegetables, grilled meats and hearty salads. The creamy consistency is a great alternative to dairy based dressings and has the benefit of being nut free so it is allergen and school safe. When you are purchasing Tahini, make sure to check the ingredient label to ensure the product contains only 100% ground sesame seeds.

We paired our Tahini Dressing with this amazing purple cauliflower in honor of Purple Day, a grassroots effort to raise awareness of epilepsy worldwide. The purple color of the cauliflower is due to the presence of a subtype of flavonoid compounds called anthocyanins, which may help to regulate your blood lipid and sugar levels and body weight, as well as help to lower your cancer risk. Additionally, purple cauliflower contains a compound called glucoraphanin, which is also found in common green broccoli. In your body, glucoraphanin can be converted to compounds with anticancer properties.

Simply toss the cauliflower and a sliced red onion with avocado oil, garlic powder and salt. Roast on a sheet pan in a very hot oven, about 450℉ for 15 minutes. Finish by roughly chopping fresh cilantro and drizzling with the Tahini Dressing.
