In the small town of Strömsnäsbruk, an old paper mill has been turned into a high-tech sturgeon farm. Here, Swedish company Arctic Roe produces black caviar through gentle, live harvesting that does not harm the fish.
Live harvesting is certainly not cheap, but Arctic Roe relies on it to put fish welfare first and make caviar production more sustainable.
