This is the best BEEF enchilada recipe. Flavorful chicken enchiladas with a rich creamy sauce and topped with cheese. Yummy! RECIPE BELOW. Enjoy.

How To Make White Beef Enchiladas | Enchilada Recipe with Creamy White Sauce

INGREDIENTS:
1 pd. ground beef
1 medium diced onion
1 cup diced bell pepper
1 seeded finely diced jalapeno pepper
4 cloves minced garlic
1 tsp. taco seasoning
1 tsp. ground cumin
2 tsp. chili powder
1 tsp. oregano
1/4 tsp. salt
1/4 tsp. black pepper
*In a skillet on medium high heat add ground beef.
Cook and chop until no longer pink.
Add onions, bell peppers and jalapenos. Cook and stir for 2-3 minutes.
Add spiced and minced garlic. Cook and stir for one minute and remove from heat.
Cool slightly.

Sauce:
3 Tbsp. unsalted butter
3 Tbsp. flour
1 cup diced onion
1 - 7oz can diced green chilies
1 tsp. minced garlic
2 cups chicken broth
1 cup sour cream
3 Tbsp. cream cheese

In a skillet add butter and onions and cook for a couple minutes.
Add minced garlic and cook/ stir for another minute.
Add flour, cook and stir for another minute.
Add chicken broth, stir and turn heat up to bring to a simmer.
Add green chilies, bring to simmer and cook until sauce thickens.
Turn off heat.
Add cream cheese and stir until incorporated.
Add sour cream and stir until incorporated.

MORE INGREDIENTS:
2 cups shredded Monterey Jack cheese - divided
1/2 cup Mozzarella cheese
flour tortillas

In a bowl mix cooked ground beef and 1 cup shredded cheese.

Microwave flour tortillas for about 15 seconds to make pliable.
Put 3 heaping spoonfulls of the beef/cheese mixture on tortillas and roll.

Pour white sauce over enchiladas.
Sprinkle rest of cheese over top.

Bake 350 degrees F for 20-25 minutes.
Low broiler for 30 seconds to 1 minute.

Let rest for 10 minutes before serving.
Enjoy.
