The Art of Washoku explores the deep cultural and historical significance of cutting techniques in Japanese cuisine, tracing their roots to ancient sword-smithing traditions. Japan, surrounded by the sea, developed a unique culinary culture centered around fresh seafood and the art of cutting – skills that evolved alongside the rise of raw fish dishes like sashimi and sushi.
At the heart of this tradition lies the Japanese knife. Forged using techniques inherited from samurai sword-making, these blades are prized for their extraordinary sharpness and precision. More than just tools, Japanese knives reflect a philosophy of beauty, functionality, and hospitality. In Washoku (traditional Japanese cuisine), the way ingredients are cut determines not only taste and texture, but also visual presentation.
The documentary takes us to Echizen in Fukui Prefecture, the birthplace of Echizen-forged knives. It was here in the 14th century that swordsmiths from Kyoto began crafting blades that would become essential tools in Japanese kitchens. We meet Master Masaji Shimizu, a living craftsman with over 50 years of experience, who upholds centuries-old forging and sharpening techniques – methods that remain largely unchanged despite modern advancements.
Through striking visuals and intimate storytelling, the film captures how Japanese chefs transform cutting into a performance, offering a blend of precision, respect for ingredients, and heartful hospitality. Whether preparing delicate anago or executing a flawless katsuramuki (rotary peeling), the blade speaks where words fail.
