The sunken apple cake in this video is a very traditional German recipe, exactly the kind my grandmother made every fall. It's called versunkener Apfelkuchen, because the apples sink right down into the batter as it bakes. I'm making it with heirloom apples, the way she would have.
The second recipe is a little different. My grandmother kept a sourdough starter, but she only ever made bread with it, never anything sweet. So these apple cinnamon sourdough rolls are something she never got to make. I like to think they're the kind of thing she would have loved, had she had the chance. This one is for her.
Two fall recipes. One that's pure tradition, and one that carries it forward.
