This is our Thanksgiving play: a sweet-tea brined, spatchcocked turkey roasted at 400ºF on the YS640s. We season under the skin, set the bird over sweet potatoes and aromatics, then finish with a maple-peach glaze that sets glossy—not burnt. Clear temp cues show when to glaze and when to pull for juicy white meat and silky dark meat. Strain the pan juices and pour them over the platter for instant holiday “gravy vibes.”
