Let's taste the first, second, and last thirds of espresso and V60 separately (like the heads, hearts, and tails in spirit making). What flavors emerge from the coffee during those stages? There are fractions that taste decidedly bad and probably should be discarded. Will we find any practical use for this? Or is it just academic? Let's find out.
