This recipe was one I learned as a Boy Scout way back when. It is so easy to make, especially if you normally use a cast-iron dutch oven. One of the awesome things about it is that it can be made entirely with items purchased from the grocery store on the way to camp, if spontaneity is your thing. On the other hand, if you’re a compulsive planner like me, you can make your own homemade cake mix to use, instead of a store-bought box.
If you have a camping dutch oven, you may already know this recipe! Using a specialized camping dutch oven helps to keep the lid coals on the lid, and usually also means that the dutch oven has little stubby feet on the bottom, to help hold it up over the coals. I had one but lost it in a move. As you may see in the video, it is still possible to get coals to sit atop the non-camping, rounded-lid dutch oven, but it is precarious.
This cobbler is very good leftover, so consider incorporating it into breakfast, or making it early in the day and letting it sit until after a later meal when people want a bite of dessert. It is fine warm, but its flavor improved as it sat and it was also delicious cold.
Makes enough for 6-12 people depending upon appetite or fighting skill.
Equipment:
• a cast-iron dutch oven
• a campfire, preferably with charcoal briquettes for precision cooking
• a serving spoon
• a knife for slicing the butter
Ingredients:
1 box cake mix white or yellow work fine
42 oz pie filling canned works fine, or make your own
1/2 cup butter 1 stick
Garnish with:
canned whipped cream
sprinkle of cinnamon
Cake mix:
1 1/4 cup AP flour
1/2 cup sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Procedure:
1. To make your own dry cake mix, combine all five listed ingredients very well and store them in a sealed, air-tight container until ready to use.
2. Optionally grease the interior of the dutch oven with butter.
3. Pour in the pie filling.
4. Top the pie filling evenly with the cake mix. Do not mix them.
5. Slice the stick of butter into pats and distribute them evenly across the top of the cake mix.
6. Place the lid onto the dutch oven, and place it into a moderately hot (15-20 coals) fire, placing 12 on top (for a total of 25-32 coals).
7. Allow the cobbler to cook for 20-45 minutes, or more, depending on how hot the fire is.
8. Allow the cobbler to cool somewhat before eating, and as described above, considering cooking it early enough to let it sit for some time.
