Three sandwiches are quite similar, and have somewhat similar names: croque monsieur, croque madame, and Monte Cristo. It all probably started with the croque monsieur, which is an elaborated grilled cheese sandwich, filled with gruyere and ham, and topped with more melted cheese – and often bechamel or some bechamel-derived sauce as well -- on top. The Monte Cristo is like a croque monsieur which has been dipped in egg-wash before toasting, so, essentially made out of French toast. The croque madame is a croque monsieur with an egg on top. It can be poached but we prefer sunny-side up.

Toast all the bread on one side, then use that as the inside while assembling the sandwiches. Then apply some butter to the outsides, and toast them. Top the sandwich with some cheese after flipping it to toast on its second side. Eat these fresh when they’re done. There is no sense keeping leftover croque madames.

Makes a sandwich, generally meant for one person.

Equipment:
• large skillet, or multiple skillets, or griddle
• flipping spatula compatible with cooking surface

Ingredients:
2 + 1 oz swiss-like cheese 50 g + 25 g
2 oz delicious ham we used bauerspeck, but any ham works; use your favorite
2 slices bread
2 Tbsp butter
1 ea egg
to taste mayonnaise and mustard

Procedure:
1. Preheat the oven for warming (if making several sandwiches) or the broiler (if making just one pan’s worth).
2. Butter the bread on one side and toast that side.
3. Assemble sandwiches with toasted side in. Remember to keep back about a third of the cheese for topping.
4. Butter outsides of sandwich, and place on hot pan to toast.
5. In another pan, or on another side of the griddle, crack an egg (per sandwich) and salt it lightly. Allow it to cook sunny-side up, about 2-3 min.
6. Flip the sandwich and place the remaining cheese on top.
7. Once the sandwich is done, place it under the broiler to get the cheese bubbly; watch it closely so it does not burn.
8. Once the egg is cooked place it atop the sandwich and serve.
